The best oil to use is peanut oil because it has a high smoke point.

Peanut Oil. It has the highest temp. without the smoke from burning oil. Do not fill to the top of fryer. You need to allow room for the turkey. Happy cooking.

If you dont know to use peanut oil, you need to do a lot more research before you decide to try frying a turkey. Each year, there are many accidents caused from folks attempting to deep fry their bird. From fires to serious burns. Please read everything you can about this before you even attempt doing it. Although the taste is to die for, the danger is very real to acheive it.
    Good luck and be safe

There are many different types of oils to use, and many different brands. I personally like to use WD-40.
