  • Taste: your oil has a rancid odor and taste

Deep fried pizza is a very popular dish, especially in Scotland where it originated.  This particular dish was first created in the 1970s and is often served with a side of potato wedges.  Any number of toppings is possible and in the south of Scotland, the deep fried pizza is smothered in a brown sauce and folded in half.  It’s also possible to get a deep fried pizza with salt and vinegar and brown sauce.

Okay, the science behind deep frying is this.  Any moisture inside the food is converted to steam as soon as the food is added to the hot oil.  This steam pushes against the hot oil and as it does this, causes bubles in the surface of the food (i.e. batter).  This is what causes fried food to be light and crunchy.
